Chicken Korma

When the weather is turning to Autumn, the trees are losing their bright green foliage and turning to a rustic copper, you need a pick me up that will warm the heart.

A sumptuous Creamy Spiced Chicken Korma that’ll please everyone in the family, perfect when served with Nan alongside your Rice.

What you need

For the Sauce

  • 1 Large Onion, diced
  • 3 cloves of Garlic
  • 1 teaspoon of Tumeric
  • 2 teaspoons of Curry Powder
  • 1 teaspoon of Garam Masala
  • 1/2 teaspoon of ground Coriander
  • 1/2 teaspoon of Salt
  • 1/2 teaspoon of Pepper
  • 1/4 teaspoon of Cinnamon
  • 1/4 teaspoon of Cumin
  • Pinch of ground Cardamon seed
  • Pinch of freshly grated Nutmeg
  • A glug of Olive Oil
  • 3 Large tablespoons of ground Almonds
  • 3 Tomatoes, finely diced
  • 1/2 a tin of Coconut Milk (full tin for a wetter sauce)
  • 150mls of Yogurt
  • A good pinch of Chilli flakes
  • 1/2 tablespoon of Brown Sugar

For the Chicken

  • 3-4 Chicken Breasts, diced to bite-size pieces
  • Glug of Olive Oil
  • 1 teaspoon of Garam Masala
  • 1 teaspoon of Curry Powder
  • Pinch of Salt & Pepper

1. Add Onion, garlic to a drop of water & blend. Fry mixture – 2mins then add chilli

2. Fling in yer tomatoes, ginger, ground almonds & sugar Stir 1min. Add the coconut milk, yogurt & spices. Stir through & simmer low 20mins. Watch it doesn’t get too dry, if so add a touch more Coconut Milk.

3. Whilst your sauce is simmering, mix olive oil, garam masala, curry powder and S&P. Smother over yer chopped chicken.

4. Get yer pan hot and fry your chicken, don’t move it around too much but allow it to crisp up then turn for the other side to crisp

5. Lots of Curry recipes just cook the chicken in the sauce DONT! Crisp it up, allowing it to caramelise giving it an extra depth of flavour.

Boil your rice & plate up Rice on bottom, make well in centre. Add chicken then pour sauce & garnish – Spring onion.

Done! Tuck in & enjoy!

***TIPS***

  • Careful with onions, brown but don’t burn
  • Blend your sauce when done, making it smoother & creamier
  • Leftovers? Kebab!
  • For a Vegetarian alternative, use Quorn Chicken or Chopped Cauliflower
