Another day, another Tomato soup. But lets face it you can’t have enough recipes for this particular soup!
What you’ll need:
- Onions
- Garlic
- Celery
- Carrot
- Butter
- Olive oil
- Tin tomatoes
- 1 litre Chicken or vegetable stock
- Tomato puree
- Basil (fresh or dried)
Onions, garlic, celery, carrot into butter & olive oil. Gently sweat for 10-15mins
Like most soups, fry your veg first! Get the sugars going for hunners of extra flavour. Dinnae burn it, but get a wee bit of colour on it!
Once yet veg is softened, add your tin tomatoes, then a 1 lt of chicken stock (or veg) & a guid squirt a’ tomato puree. Simmer 10-15 mins.
Chuck in a load of roughly chopped basil… (dried can be used but when you add your tomatoes)
Blend… You’re done. An autumnal rich tomato soup, I’ll have mine with a cheese scone! Or serve with some Creme Fresh and some Crusty bread!
