Chorizo, Bean and Spinach Stew

A warming smokey winter stew. Grab a bowl and a chunk of hot crusty bread, sit down, feet up, relax and watch the weather pass by through the window

What you’ll need

  • Choizo
  • Oil
  • Garlic
  • Onion
  • Tin of tomatoes,
  • Chicken stock cube
  • Dried oregano
  • Butterbeans
  • Chilli flakes
  • Spinach.

Start by frying some chunks of Chorizo in oil. When it releases its flavour then add some onions and garlic. Fry till soft.

Add a tin of tomatoes, a chicken stock cube, dried oregano (always use a quarter of what you’d use for fresh with dried herbs!)

Butterbeans and half a cup of water. Lid on & simmer gently for 20mins…

Add a pinch of chilli flakes, then a good load of spinach.

Simmer for another 5 mins, check seasoning and you’re done!
